Happy Valentine – peach pie with lemon

Do you have a sweet tooth? Then follow me this way, there is a fine peach sheet cake with lemon to bake.
On Valentine’s Day you bring joy to loved ones. And to step out of line, I baked this one for my son’s school class this year. All great kids. The cake was well received and that’s why you can find the recipe from Springlane Magazine right here. Let’s get started:

You need:

  • 400 g flour
  • 1 pinch of salt
  • 6 eggs
  • 200 g powdered sugar
  • grated peel of one lemon
  • juice of half a lemon
  • 1/2 teaspoon vanilla extract
  • 100 ml lukewarm milk
  • 120 g sugar
  • 125 g soft butter
  • 1/2 sachet baking powder
  • 1 can of peaches
  • powdered sugar for dusting

Instructions:
Personally, I always make all the ingredients ready to go. For measuring flour, sugar, powdered sugar and milk, I grabbed the 1.5 liter measuring cup from Rotho. The great thing about it is that it not only gives you all kinds of quantities, but you can also use it to squeeze citrus fruits and grate their zest.

Preheat the oven to 180 °C top / bottom heat and line the baking tray with baking paper.

Separate the eggs and whip the egg whites with salt until stiff. Let the sugar drizzle in slowly, cover it and refrigerate.
Whip egg yolks with softened butter, powdered sugar, lemon zest and vanilla extract until they become light in color. Pour in lukewarm milk and lemon juice and stir until creamy. Mix baking powder with flour and stir into the mixture. Gently fold in whipped egg whites until a smooth dough is formed.

Cut peach halves into thirds. Spread dough on baking sheet and top with peach wedges. Bake in the oven for about 30-40 minutes. Test with a wooden stick, no more dough should stick to the wooden stick.
Now if you have too much zest, peaches or lemon juice, you can freeze them in small portions for next time. These are also great for leftover soups, herbs, etc.
Remove cake from oven, let cool and dust with powdered sugar. For transport, I can recommend you the cake butler also from Rotho. Especially in summer it has a “cool” gadget, if it is warm and you want to transport a cheesecake or similar. In the lower part you can insert two coolpads, which are already included in the product and thus keep the sweet content cool.
